Easy Chicken Lo Mein

with Fresh Veggies




Love this dish - so easy to put together - it's packed with fresh veggies and is so full of flavor! It's fully customizable - I made it with ground chicken but any meat can be used (or it can be made vegetarian) - beef, turkey, pork. You can also throw in whatever veggies you have on hand.


Easy Chicken Lo Mein


Ingredients


  • 1 package of lo mein noodles

  • ground chicken

  • broccoli

  • carrot sticks

  • napa cabbage

  • red pepper

  • green onion

  • 2 garlic cloves

  • sesame seeds

  • salt & pepper

For the sauce:

  • 1/2 cup of chicken broth

  • 3 tbsp soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp sesame oil

Step-by-step Instructions


  1. Cook the Lo Mein noodles per the package instructions.

  2. Prepare the sauce by mixing all the ingredients.

  3. Cut up and cook the veggies in a splash of olive oil. It's best if they are cooked individually and combined in the end.

  4. Brown the ground meat with the garlic and the white parts of green onions.

  5. Once the meat is fully cooked, add the cooked noodles, veggies and sauce. Mix well.

  6. Plate topping with the green parts of the onions and some sesame seeds!
