The kids requested past for dinner and although theirs was made with good old spaghetti sauce, I put a little zing to ours. I hope you enjoy this recipe!
Pasta with Prosciutto, Burrata and Toasted Breadcrumbs
Ingredients
any pasta you like
5-6 large mushrooms
2 cloves chopped garlic
1 tbsp salted butter
1/2 cup panko breadcrumbs
crushed red pepper flakes to taste
3 tsp tomato paste
1 tbsp mascarpone
prosciutto
burrata
salt and pepper
Step-by-Step Instructions
Cook the pasta based on the package instructions. Reserve some pasta water when draining.
Melt the butter in a large frying pan until it browns slightly and smells nutty. Add the breadcrumbs and toast mixing constantly until golden brown.
Take out the breadcrumbs and wipe out the pan.
Cook the mushrooms in a splash of olive oil for 3-4 min. Season with salt and pepper, add the garlic and red pepper flakes. Mix in the tomato paste with 1/3 cup of water.
Add the pasta, 1/3 cup or reserved pasta water and mascarpone. Stir till everything is mixed well.
Serve the pasta with pieces of prosciutto, the toasted breadcrumbs and broken pieces of burrata on top.
